By Jacob is a Newmarket based dessert boutique focused on European treats with an Asian flair. We cut no corners by sourcing the highest quality ingredients and using the most refined techniques to provide the best gelato, cakes, and macarons you can find within the GTA. Our gelatos are all made in small batches in house to maintain consistency and freshness.

Gelato vs Ice Cream
Gelato is made using a slow churn process which whips less air into the custard (< 20%). This in turn gives gelato a denser texture and richer flavor. Ice cream on the other hand has 50+% more air whipped into it, giving it a light fluffy texture.
Gelato has a less fat (4-8%) by using more whole milk and less cream vs ice cream (10-18%).
Gelato is served at a slightly higher temperature (-13 degrees Celsius) which provides for a smoother texture than ice cream (-20 degrees Celsius)
